I decided to do a stuffed pork tenderloin roast for dinner tonight, along with a few kielbasa that I will suck and freeze for dad and a couple of fatties for tomorrow's breakfast. I rubbed the roast last night with EVOO and my rub. This morning, I stuffed the tenderloin roast with herbed cream cheese, spinach, carrots, potatoes, celery, onion and some fresh herbs. Then tied the bad boy up and threw him on apple and cherry wood. I may have to finish in the oven as I got a late start or bump up the heat in the smoker after a four or five hours. I'll make the fatties in a bit to throw on with the kielbasa later. Going to try another biscuit wrapped breakfast fatty.
