Stuffed Southwest Smoked Brisket Potatoes

We had some leftover smoked brisket (hard to believe!), so my wife decided to try a variation of a recipe she had just seen in a magazine.  The result was one great taste sensation!!  The photo is after she had already eaten most of her potato.  We just had to post this anyway.


RECIPE:

2 Large baking potatoes

1/2 can Southwest bean salad (other bean combinations would probably work also)

1 cup Chopped smoked brisket

1 cup Grated Smoked pepper jack cheese (divided)

Toppings:

Sour Cream & Salsa

Scrub and pierce potatoes.  Place on a microwave safe dish and microwave uncovered on high for 15-17 minutes (until tender). 

Combine southwest bean salad, smoked brisket and half the cheese in a large bowl.  Microwave about 1 minute until cheese is melted.

Cut an "X" in the top of the potatoes and fluff with a fork.  Spoon the smoked brisket mixture over each potato and sprinkle with the remainder of the cheese.

Serve with the toppings.  You could also use other toppings such as sliced olives, chopped onions, etc.

This is really good.  Try it!!
