Stuffed Pork Tenderloin with Smoked Taters

    Just regrouping after the wedding and honeymoon, found a pork loin in the freezer Friday so decided to give it a shot.  We are also smoking potatoes for mashed potatoes and gravy:

    Here is an attempt to fillet it, not horrible but a minor blowout:

    Just a basic homemade stuffing on top after the rub was applied to both sides:

    Tied up and ready to go!

    It was good, just not the same as other dishes I guess.

    Thanks Al - it was pretty good, we could have done much better on the taters and gravy but that wasn't the pork's fault!

    Thanks B!  I saw one on here somewhere injected with cheese sauce, that sounds like a worthy one to try!
