Hey everyone had some time to load up the pictures I took yesterday while making my first stuffed pork tenderloin, I stuffed it with caramelized onions, diced black olives, pepper jack cheese, and baby spinach. I rubbed the outside with Italian seasonings and oil, with a strip of bacon on top for added moisture. I smoked it at 240 for about 2 hrs 45 min in my MES with mesquite Traeger pellets (couldn't find any hard wood when I bought them). I am looking forward to this bag being gone! I pulled it at 155 and double wrapped it in foil, put it in the cooler with some towels for about 30-45 min. Enjoy....... Thanks for stopping in!!
