Nice day to smoke a stuffed loin I tried a new method of butterflying the loin by using an electric fillet knife. It would have worked well if the knife wasn't duller then a hoe ! Here's the ingredients mushrooms ,jalapenos,cheese green pepper and onion (also corn bread stuffing). Veggies sautéed and added to the stuffing. Stufffing mix lathered on the loin and then tied and a nice rub added Smoked with apple chips at 200-225 for 4+ hours until an IT of 147* was reached. Rested for 5 minutes and sliced for dinner ! thanks for looking !
