Stuffed Pork Loin

    Stuffed Pork Loin

    2Lb Pork Loin, Butterflied

    Fried some Onions and Homemade Smoke Bacon


    Made up some Stuffing

    Assembled on the Pork

    Rolled and Tied

    Smoked @ 220 (105) for approx three hours until IT was 170 (77)


    Monkeys full tonight!!!

    Boy they don't trim any fat off them, do they. I get about an eighth inch if I'm lucky (or unlucky depending on what you like).
