Here is my first shot at Dutch's recipe for stuffed pork loin - modified a little! Thanks Dutch for your great sticky! Here is the loin spread out with the ingredients- 1lb JD regular breakfast sausage and my own 1lb elk sausage on left, bell peppers, couple of jalapenos, onion, cheese and mushrooms (not shown - garlic). I'm not as handy with the knife as Dutch is but I got it done! Here are the bell peppers, garlic, japs, and mushrooms cut up. Here is all the meat and ingredients fried up. Here it is all laid out with the topping of mozzarella and swiss cheese. Here it is rubbed and stabbed to hold it while I try and tie it...(thanks for the tip Dutch!) This was my first time tying...Don't laugh at the craftsmanship -It actually held together! And the finished product - pulled at 162 Not bad for my first try - The elk was great inside!
