Hello all, I've been a frequent reader to this forum. I've finally decided to subscribe and post. I'm new smoking meats but am really excited to get going this summer. For my first smoke of the year I stuffed Cornish hens with rice and used a off the shelf rub to add some flavor. They looked amazing but I wasn't really happy with the overall taste.
 
If I am not mistaken, the boss just put his newsletter out with a recipe for smoked Cornish hens.

If you are not signed up for the E-Course I highly recommend it, if you are an old Pro, its a great refresher of the basics, if you are new its a great way to get your feet on the group. Oh and did I mention its was free? Just sign up and you'll get one installment a day for 5 days. I am guessing it was a streaming issue before you ask.

Also, I see you are new to the site. If you get a minute please drop in the forums section to the "Roll Call" forum and introduce yourself so you can get the official welcome for all the folks. Besides you'll need to learn the secret handshake. It quick, its easy, and its almost painless. Well except for... but that's a whole different story.

Last but but (I stuttered), certainly not the least, please take a few and click on the "My Profile" icon on the above tool bar, tell us what you'd like us to know about you, as well as where you lay your head to sleep at night. It really helps in discussion and answering questions to know your proximity. They might be a free meat being given away and you'd miss it, but more like the climate concerns for your cooking.

Thanks heaps and I didn't mean to load up on ya.  Those are pretty hens....... But ..... well I could not smoke dressing for fear or creapy crawlies, but I'll bet its your rub that caused your indifference.

I am so long winded....Some one get me off here!! Help help... I keep typing!
