here it finally is. i spatchcocked the chicken, then i cut off the wings at the second joint, then after that i deboned the thigh and leg together, not a big deal. really pretty easy. then put it in a gallon ziplock bag overnight brining in zesty italian dressing. then laid out the chicken on a flat pan, made some stove top stuffing (savory herbs), then put on jeffs cowboy rub on the inside of the bird. then put dressing on the inside got it all tied up with butchers twine, and rubbed down with more of jeffs cowboy rub. then fired up the old lang smoker then put the chicken on smoker and put the other part of wings parts on there to. here is the finished chicken, and the appitizers here it is all plated up. thanks for looking, try this boneless chicken, its pretty darn good.
