Strip Jerky

Another batch for my wifes co worker.

My basic ingredients.

Mix all to the 3 cups cold water.

1 cup soy

1 cup worchy sauce

2 Tbs non iodized salt

1 tsp cure 1

1.5 tsp curry

1-3 tsp cayenne (to your taste)

1.5 tsp black pepper

2 Tbs onion powder

Mix well and set aside while you cut meat.

In my Reveo with 3, 20 min spins.

If you dont have a Reveo or vac canisters, use a gallon zip lock bag, stir every few hours so all the meat gets marinade.

What cut of meat did you use... Thanks for the recipe nepas... I will have to give it a try................

That is pretty much my basic recipe but I use  apple juice and no curry....Now I see how you make new friends....looks real good.
 
The jerky looks great Rick, I have never made it, guess it's one more thing to try this year. I love the Corona bottles! What are you using for the tops?
 
One quick question for you guys. Normally when I am marinading my jerky it says to marinade it for X amount of hour to not only give it better flavor but also go give  the cure time to  get into the meat. Am I right or wrong there? When you have one of those Reveo units does it make the marinade and cure get into the meat faster so you don't have  to let it sit so long for the cure  to  get  in there?

The Reveo is a vac seal canister, As you know when you pull a vac, the meat tissue opens up which allows the marinade to fully penetrate. I normally just do a 20 min spin but this time did 3x.

Now the bad part. Eastman Outdoors does not make the Reveo anylonger. They said they were not that great of a seller. I did find another one but its more $.

The bottles had those tops on them when i got them. Got them at a steak house by my sisters in Calif.
 
Rick ...how long do you put smoke to your Jerky? I'm doing a batch of venison jerky this week and I'm thinking first hour at 110 to dry it a bit...then 3 hours of hickory from my Amazen at 125...then raising the heat to 150 and finish drying. Any help would be appreciated...Len

I put about 1-2 hours of smoke to my jerky. Most of the time after the smoke i put in the dehydrator, you will get a better finish jerky that way unless your smoker has fans in it. Your way is good, just remember you want the jerky to bend, not snap.

I love my Reveo. Got a great deal on mine at Amazon. It had been returned but not opened. Try the Amazon return shop.
