Sticks From The Water Stuffer

Did 5 lbs from the water stuffer outside this morning. Lots different from in the house. The table is down lower.

My mix and cure 1 added to the water. Small bowl is 6 tbs ECA added while mixing

Next time outside i put an easy up out. The casings got really soft.

Hanging at 130 for 2 hours to dry up some then PID to 140 thru 170 with smoke.

A long time ago I watched a Utube of a water stuffer in action (just a little one). 

They are really neat, but nothing like the Howitzers NEPAS uses!

Very Cool!

I just made 50# of sticks, and they came out wrinkly like yours.  They taste great, but don't look perfect.  I submersed them in ice water immediately after they hit 156°, but still got some shrinkage. 

Guess we all would get a little shrinkage if we were submersed in ice water.

A friend of mine made it for me.
 
Have had allot of messages about my stuffer.

The stuffer is made of schedule 40 high pressure pipe, fittings and parts  (not cheap drain, sewer or sprinkler pipe)

If you make it out of used sewer pipe, you don't need to add as much meat!
