Sticks asummer sausage.

    Helped a buddy mix and stuff some Pepperoni and hot sticks along with some summer sausage. All were made using elk and some pork butt. All were dried in the smoker for several hours and then "kissed" with some apple smoke.

    Had some of both the other night and they were very tastey.

    Man i cant wait to make that! Love the slide out racks on the smoker.
    I need to see if the GOSM will work for sausage. Have to do my forum research on it.

    I use my GOSM for sausage and sticks all the time
    I just cut some wooden dollrod to fit and hang it across the shelf brackets
    I can get about 20# of links in at a time. turn it down about as low as it will go without going out and maintain around 160*

    I will try that. very hard to get temps down usually but i can always try adjusting the vent that i never adjust. :)
