Ate at Does Eat Place Tues then another steak feed next day. I grow my own beef, but these 2 steak dinners were tops. Both use a gas overhead broiler...anyone ever seen an outdoor home model??? Sure gives it good flavor...never had one like that before. Damn good beef.
 
Here is one l found after a quick search of outdoor gas broiler salamander...The key is high output lnfrared. Does not really matter if from the top, broiler, or the bottom, a grill. You just needs A LOT of energy hitting the surface of the steak super searing the surface before the energy is conducted to the center cooking or overcooking the steak. Restaurant Salamanders scream at 1600°F+...JJ

Vortex seems to have a great following for what you described. I've got one on the long list of toys I don't need. Cheap to try and people swear by chicken done by it.
