Whats the best place for my smoke stack coming out of the back or the
top. Going to use charcoal. In the process of building a coal pan to put in the bottom.
Will update with pics as I move along fill free to give any input this is my first smoker build.

That's going to be a nice one dp! All of the fridge smokers I have seen have the stack coming out of the top. (I have not seen all fridge smokers in the world though.

It's nice to have a baffle in your smoke stack....also around here mud daubers are bad. I put a screen on my stack and a rain guard.

I am looking forward to your "after" pictures.

Debi, it's a kind of a wasp.... builds mud nests in anything it can get into. They are a real pain around here.
 
I agree with debi, I have seen them on the top.


I know there is someone on here with a homemade fridge smoker. His avatar is himself, He is a big guy standing by his fridge, holding what looks like a 40oz. beer mug. I'm sure he can help you. I just can't think of who he is.
 
Man...them old things are just CRYING to be re-born into smokers, ain't they? 'Course, I thought that old pop cooler I bought was too...now it's me that's crying...OMG what a project! But I see the end... :{)

Small world yet again brother! I have 1952 Frigidaire in my garage waiting for me to attack it. It used to be my "Keg-O-Rater" but would just never die!

I'm going for the standard out the top crooked smokestack. (with dampers) but I want to remove the motor/compressor assay in the bottom and put the whole thing on a brick pedestal with a remote firebox. Then the bottom of the fridge will have a center located smoke inlet with a layer of smooth river rock above that for a smoke defusser. I want the firebox to be remote off to one side, with a circular (built into the brickwork and wrapping around the pedestal) 8-10 foot tunnel from the firebox to the inlet so I can maintain < 100 F for cold smoking. I plan to add a propane burner inside the fridge for hitting the higher temps up to 225-250 for hot smoking. I figure if I set it up that way I could use it for anything from cold smoked salmon and jerky, up to 170 F for sausage and finally 225-250 F for butts and brisket at the top end. Thought of adding plumbing for a sausage shower too as long as I'm there.

I don't think most fridge smokers are normally used for high temp smoking but if I replace the rubber door seal with asbestos rope I don't see why it wouldn't work just fine. The insides are all metal after all and its just pink fiberglass insulation in the middle, like many home ovens are, so why not?

I noticed you cleaned off the external surface of yours so I'd guess you plan on painting the outside? I was thinking of tiling mine just to confuse my Kamado owning buddy. I also found a really cool steel hatch latch from an old Swan's refrigerated food truck to replace the door latch with. As you say though it's a bigger project than it looked like to start with.
