Started smoking brisket and had to stop

  1. I need some help. I began smoking a brisket this morning in my electric smoker on 225 degrees. After about 20 minutes we had a family emergency and had to leave for several hours. I pulled the brisket out of the smoker, wrapped it in foil, and put it back in the fridge. The internal temperature was about 86 degrees.

    The question is, will the brisket still be okay to put back on tonight, or in the morning, when I get back? Or, is it a goner?

    Any help would be appreciated.

    I'm going to say it would probably be OK, but I think to be sure, Chef Jimmy J should answer this question.

  3. Thank you for the response. I put it back on last night and finished cooking it, but haven't tried any yet. It's in the fridge fur now.

    Have to head back to the hospital for a few more hours, so won't get to cut into it for a while.

    Al's correct. No issues as you describe the situation. There would be more concern if it was injected but even then a brisket heats and cools realatively quickly. Hope all is well with your family member and enjoy the brisket...JJ
     
  5. My apologies, but I did inject it with beef broth prior to smoking it the first 20 minutes. Hopefully it won't hurt anything. I guess I'll try it later and find out.
