I need some help. I began smoking a brisket this morning in my electric smoker on 225 degrees. After about 20 minutes we had a family emergency and had to leave for several hours. I pulled the brisket out of the smoker, wrapped it in foil, and put it back in the fridge. The internal temperature was about 86 degrees. The question is, will the brisket still be okay to put back on tonight, or in the morning, when I get back? Or, is it a goner? Any help would be appreciated.
