Rainy Day St. Louis Ribs. 6 hours of Maple hickory smoke. Honey maple sugar rubbed with a whiskey chipotle peach glaze. Side of homemade creamy sweet carrot cabbage slaw.

8 bucks at Wal-Mart for this big slab!

Tore off the membrane underneath. Rubbed it with chipotle powder, paprika, onion powder, garlic powder, and maple sugar. Let it rest while I preheated the smoker to 225 degrees. Used maple and apple wood.

Here it is three hours in smoke!

After three hours I foiled ribs in a puree of peaches, key lime juice, peach tea and whiskey. It will be covered for two hours.
Ribs back on the rack to be glazed two times over the next 1.5 hours. I made a reduction from peach reserves, 1 shot of whiskey, honey and chipotle powder.

I prefer fall off the bone, but my wife likes a tiny tug of the teeth with her ribs. Perfect..
