Hello all,

I'm pumped to be on the forum and learn more about smoking. I have learned so much just in the past couple days. I'm originally from St. Louis, MO and after finding no suitable bbq out here in New Jersey I thought I'd take matters into my own hands.

I just bought an old brinkman trailer offset horizontal smoker (lingo maybe not correct) from a guy in Philly. It is built out of very thick gauge steel and has a nice convetion plate in the bottom that came with it. It is in great shape, I got it all cleaned and seasoned and did my first rib smoke on it.


I've been cooking ribs for years and have done a few pork shoulders on the weber but this will be my first foray into real deal smoking. Any tips and advice you have would be great. Can't wait to make this a big hobby!

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions Post it
and you will probably get 10 replies with 11 different answers. That is because their
are so many different ways to make great Q We all have our own taste

We love to see pictures of what you are cooking (or what we call q-views here at SMF).  To "upload the q-views" just follow the directions here and it will be easier. If you are using a cell phone, an IPad or a kindle, go to the main SMF page and click the Mobile button. Will make the uploads a bit faster too.

Jimmy, you will find lots of tips and ideas here. I started smoking last year and I have a list of things I want to do from this forum that will take years to get through. I read the posts as my morning "Q paper" and keep getting more ideas. The members have also been very kind with their advice.

You might want to check out ”Jeff's Free 5 day E-Course”, it will teach you all the basics plus a whole lot more!
 
Welcome aboard, Jimmy!  This is the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks who really enjoy helping one another.  Looking forward to your input here, and just ask when you need anything...someone here will surely have the answer.  I like the pic of your pit...nothing looks better than a smoker full of ribs!

Thanks for the warm welcome! I'm really excited to get my smoker going more often. I have a rib club up here and adding this baby to the mix is really taking it up a notch. I plan to mod a few small things (already made a charcoal box per this site!). After I seal up some leaks I'm just gonna practice practice practice... Any advice let me know!
