Is that a McCall you made the double door smoker out of?   Reason I ask is I picked up a single door stainless McCall reach in warmer & I'm thinking of leaving the insulation in like you did.  If your unit has been running just fine with the factory insulation in place, that is a good sign for me.  Here is a post with photos of the one I found (and it has a double fan air recirculation system already built in).  Also how high have you had that one for a smoke?

Love this build I'm in the process of picking up a double stainless from a buddy for free. Tried looking up so,e of those links couldn't find what you where talkin about. Can't wait to get started on mine
 
Sorry I haven't been online in years, but I'll try and answer some questions. Its still up and running fine.

1.) It has been converted over to pid control with dual ssr's about three years ago.

2.) No problems with the factory insulation. The highest weve had it was 225 finishing some turkeys up usually the highest we go is 180-190.

3.) We are going to some day revamp the heating element, get rid of the dryer element and blower and go to oven style burners. when that happens im going to push my limits and try and go with some sort of wifi control

4.) I'll try and get over to dads and take some current pictures. Its not very shiny anymore. :)

would like to get the plans for this unit seeing,that i have one of these.the pic do great but would like more info,trying to build one for our legion post in mn.thank you.
 
Great looking smoker!! I am building one with pretty much the same components but with a single door commercial Coke refrigerator. How did you hook up the Auber 1500 dual probe 1800W temp controller that is what I am have and am going to hook up.

Didn't go with an auber just used an eBay special with two ssr's just make sure you heat sink them
 
What did you use for your exhaust?  It looks like what I am looking for.  Also - any issues with venting it out of the top?
