spring break pork butt

  1. So after a fabulous anniversary gift from the hubby (a maverick 733) and finally being on spring break from nursing school I decided to dust off the smoker and do another overnight smoke! I have a very very delicious smelling pork butt in and has been smoking at about 244 for 4 hrs and is currently at 154! Made my own rub for it plan on using chef jjs finishing sauce and pulling it out to rest at 203! Now if only the Idaho weather would agree with me and warm up! A fire 3 layers and a sleeping bag later and I'm still about ready to climb in the smoker to warm up!
  2. 5.5 hrs in and my IT is at 165. I found a nice lovely warm spot about a foot from the fire box :). I'm ready for the stall!
