Spray brisket?

Hello everyone,

   Time for the week long camping vacation to the Thousand Islands in NY.  This yr I am taking my Smokin Pro offset with me.  I am planning on doing brisket with a few modifications and I was wondering if anyone spays their brisket?  Also, if you care to continue to read I will tell you all my plan, I am cooking for 25 people.  I have 2, 13 pound packer brisket.  I plan on trimming it and rubbing it the night before.  I will pull it out of the cooler and begin smoking at 225, I plan on putting them in an aluminum pan and wrap at 165 IT.  I will cook until 185- 190  depending on the toothpick.  Then I will separate and try for burnt ends.  I typically do not wrap but with camping I do not want to be cooking at 0200 hrs and waking the rest of the campers.  I will be making an Au Jus as well as some homemade BBQ sauce.  

  If anyone has thoughts on spraying the brisket before wrapping, or if there is an issue with my please let feel free to let me know.
