Spicy Blueberry Mustard Pulled Pork Qview

Yesterday was a day dedicated to some great pig. Here is what i tried to make to have in time for dinner.
I took at 4.5# pork butt and injected it with about a cup of my favorite hot sauce. This stuff is the best ever, you can put it on everything. To me, its not a real hot hot sauce, but more of a Spicy Taco Sauce.

I then slathered the outside with Blueberry mustard that my boss gave me. He apparently loves it on everything.

... and rubbed with Jeffs rub.

After smoking at 235ish with Hickory and Cherry for 4 hours I probed it to find the IT at 138.

I put it on at noon thinking that the 4.5# butt would be done and in my tummy by 8pm, but at this point i knew it wasnt going to be done so the backup plan came in handy. Baby back ribs and a raspberry chipotle pork tenderloin.



Back to the butt now, At around 6pm the temp had been 152 for the past hour and i was getting worried that my probe wasnt in the right place. I readjusted the probe and added another probe to find out that it really is 152.
I did not know that a pork butt can stall like a brisket, but it sure did. A little after 11pm, the IT of both probs hit 165. It was swiftly taken off, wrapped and coolered until 1am.



It pulled with no resistance and there was still hot sauce inside. The blueberry mustard left a very nice tang to the outside and the hotsauce was just barely noticeable in the flavor, but there none the less. I saved the resting juices in the fridge to skim the fat off and add back in.
Todays lunch was absolutely wonderful with the juices added back and piled high on dinner roles. I should have taken a pic but time was short.

I never hear of Blueberry Mustard, where do you find that at? Everything looks fantastic, really really good.

for the blueberry mustard.

I live about 45 minutes from the blueberry capitol of the US and have never sen blueberry mustard even there. I do love using those flavored mustards, regular mustard on a butt won't leave any flavor but a seasoned mustard (I love using chipotle mustard) will leave a nice underlying flavor.
 
Wow just the title made me check this out. spicy blueberry what ???? Man that is great ! Now I have to look for that at the store.

Thanks for the comments guys. The Mustard is bought online at http://www.theblueberrystore.com/gourmet-favorites/. I actually wish it had more mustard flavor or even a little horseraddish in it. It has the consistence of a very thick honey mustard spread and it stuck to the butt really well.

Heres a pic of the mustard on the butt so you can kinda see what its like.

for showing us. I use that hot sauce too on occasion and like you said, it sort of like a spicy taco sauce with a bit of Mexican seasoning tossed in.

That blueberry mustard had me going since I'm on a blueberry kick right now. Don't know why but I'm loving everything blueberry. So I just had to order the vinaigrette, the Blueberry Feast Combo ("one 15.5oz. Blueberry Barbeque Sauce, one 18oz. Blueberry Mustard, one 16oz. Blueberry Salsa, and two 0.75oz sticks of our delicious Blueberry Beef Jerky"), and 10 lbs of frozen berries. Around here we get the little 8 oz things of them (fresh though) for way too much $ and the frozen ones seem like they've were slow frozen so are all crystalized, so this will save me big $ and quality if they ship them...might be too far away and I think I was supposed to jump through an extra hoop or two before I ordered, but I guess I'll see.

Can't wait to try the rest of that stuff though!
 
I cannot wait to try this!! I'm with Fire it up! I head down the shore all season long and it's blueberries galore down in South Jersey. I can' tbelieve none of the farm stands have dome up with some of these products!!! Gonna have to get me some of that mustard!!
