Made up a slab of baby backs today. Had to take advantage of the 50 degree weather in Ohio. I removed the membrane, applied a coat of mustard, then applied a bbq rub from a local grocery, then put on a light layer of cayenne pepper.
Put on the smoker around 12, cooked about 3 hours, wrapped in foil with squeeze butter and brown sugar. Cooked for about another 2-2.5 hours, and then put on my grill to finish with the sauce.
They turned out great, and the cayenne was just enough to give an extra kick. I finished with sweet baby rays award winning sauce.
