Speed Brisket...w/a view

Well today I smoked 2 13# briskets and 2 7# butts. The butts are still going, the briskets were done in 7.5hrs!!! I set my temp, had it going at 225* after 3 hrs then put the therm on the butt side(2 halves to my smoker). At one point I went to squirt some aj on the meat and noticed the brisket already at 157*!!! I thought "oh, .........stinkenhymer!" (I'm being more polite.......can't quote what I actually said

So I foiled as usual and pulled one off at 205*, the other one didn't feel as soft so I took it to 210*. The 210 would have been good for pulled brisket, but I like it sliced and in juice.

Brisket is good, a bit drier than normal but once it is put in the juice it'll be alright. Still very tender, fair smoke ring, tastes great, but is very filling.

This site has a pic of Hope, 4 pics of the 210 brisket, and some pics of my smokers .............I was going to do a pellet smoker review but it was take'n too loong. Some day.

I have been due for some "view", so here is what I got. Guess I felt guilty for not post'n enough pics.

Everything Looked GREAT to me! Brisket is the next thing I am shooting to do. Actually only thing I really haven't tried yet.
Again I think everything looked very god.

Looks good to me, cant see any reason for criticism on the smoke. Did it pass the family test?
Brisket has gotten pricey here, havent done one since late summer

The meat looks good to me, and thanks for the pics. I like the look of that pellet feeder, that is one thing that I have not yet seen in real life. Just curious, what is the pellet consumption rate of a rig like that. Pounds per hour? Price per pound? Do the pellets provide the heat and smoke? I will have to do some research it looks like.




And by the way, it seems that I have had a quicker than expected smoke or two here lately (Well, not real lately) I think that over confidence causes it. That is, I have quit peeking at the food every fifteen minutes or so. Now the smoker stays at temp for a greater portion of the cooking time, and thus, it seems to cook way faster than it seems like it would have a year ago. Go figure

GoFish, yeah, the cheapest I can find a brisket around here is $3.99/lb... and that's just the flat. I can't find a whole packer anywhere...
 
I just saw whole brisket last night at Albertson's grocery for $1.99 per pound. Had a real nice looking 12 1/2 pounder, but I passed it up. Waiting for the weather to warm up a little before trying a brisket.

The last brisket I did hauled arse also. 13lber done in a little under 9 hours. Put it on at midnight and went to bed, wrapped it at around 7am and it was done and resting.............for a loooonnnggggg rest at about 10 til 9.

Must have been off one of those racing cows.

Phil.....its amazing.........round here flats go that high......even in pig city iowa........but the packer goes for bout 150-160/lb.......simply amazing......
 
Looks great!!! I did a 10 pound Kobe beef brisket...it was done under 6 hours. I've read before that the kobe brisket cooks really fast...just a note in case anyone decides to do one for a comp...
 
Zapper, I'm not real sure on pellet consumption. I would guess about 1/2 - 1#/hr. Depends on weather, most of the time I'd say figure 1/2#. Cost is about $.60/# The pellets provide the heat and smoke.

I've had a few go fast, not this fast, and I've had them take 2+hrs/#. I've had them too juicy(just made me made I was loose'n the juice all over) and too dry.

I've had the same luck w/butts. The ones I did the other day had a fast and a slow. The bigger one went faster.

If I had any temp probs they weren't for long. I had probes everywhere, mess'n around. I also opened the lid to put a baste on the meat every hr-hr1/2. I guess I should call up ol' Ripley and see if he "believes it or not".
