Spatch Cock---Chicken

  1. I'm going to smoke a couple of Spatch Cock Chickens this


    weekend how long would it take to smoke & what would

    be the right Temp. & Time to set the smoker at I have a Electric

    I smoke mine at 250º and they usually take 2½ - 4 hours depending on the size.

    I try to find the smaller birds as they are more juicy and tender.

  3. What Raptor says sounds right. I also brine my poultry.
     
  4. i smoked four yesterday at 275 and finished at 300 deg to chrisp up skin in about 3 hrs. usedamaz-n-smoker with pecan.turned out great..charles t.

    PS i also brined over night

    Same here.  Brine, smoke hot, enjoy.  
     
  6.  brine several hours in salt water and brown suger mixture and smoke ~ 3 hours @ 250* to ~ 180* in the thickest part of the breast.

    Coloradosmoker , the guys have given you some solid advice , however the 180* in the breast may dry it out a bit...IMHO , 165* is done for Breast and the meat stays juicier ; 180* may dry it out a bit more than you want and lead to using a lot of sauce on it [​IMG].

    I like to cook mine closer to 350 for a little over an hour.  I always look for 3-4 pound birds they are the best.  Brine, season, glaze serve.  Chicken is the most underrated meat in my opinion once you can cook it good it is a great meal at a low price.

    Yup just i like to brine the birds so they will be moist

    Brine, inject, high heat, enjoy!

    I'm with Old School, 165 in the breast it just right.
