Thanks all. Yes, I went with crushed pineapple instead of chunks. My wife had serious issues with the pineapple (seems as a child she ate a whole 15 oz can and later, well...she ralphed)
But she reluctantly tried them and declared "the're ok".
Course, tonight I put dogs and burgers on the grill with the leftover beans on the warming rack. For dinner, she didn't want a burger or a dog with relish. Nah, she wanted her dog cut up in the beans! Smoked beans and wienies! And she hasn't griped about the pineapple at all.
My beans were definitely sweet, no kick whatsoever. Next time I am going to go heavier on the ground mustard. I think I will also replace half the ketchup with BBQ sauce. I'll keep you updated.
The ribs were just a quick rub and on the smoker. I did do something different though. I cut the ribs in half and put mustard and rub on one and then I used prepared horseradish and rub on the other. I have to admit that the horsey gave the rib more kick than usual. I thought that it was really good though. So to those who are allergic to mustard, horseradish is a nice substitute. But be warned that the flavor of the horsey comes through more than the mustard does. It isn't going to clear your sinuses, but you can taste a tinge.
