Got them rubbed down and waiting for the fire to get up to temp. Figure I'll do 3-2-1 on the spares and 2-2-1 on the babies. Plan on foiling with brown sugar and honey and homemade crab apple jelly.

 
Just put the spares on. Smoker was being slow and I got over zealous with the fuel. It's running close to 300 so I'll just let it cool.

I still think they were too tender. Couldn't even pick it up without it breaking. Flavor was great but would like a little more substance.
 
I did 2 racks of untrimmed spares using red oak in my stick burner a couple of weeks ago. I did the 3-2-1 method at 225 degrees and the texture was perfect. My flavoring is where I'm having my problem. I'd say your temp was too high.

It might be a good idea to try again today at 225 degrees and see how that works out
