Spare Ribs W/ Q-View

Lookin' forward to some Q View my friend. I like spares, lots of room to push the envelope...
 
Movin kinda slow today. Anyway..... went to the store to get apple juice and a chub o sausage and they had boneless breasts on sale for 1.99 a lb.
I had already grabbed a couple pounds o bacon as it was on sale too so with all that AND the sausage I headed home. Ribs were already rubbed, with Jeff's rub with some cinnamon chipotle added, n ready so I fired up the pit and while it was getting to temp I put some rub on the chikn breasts and wrapped them with Bacon. Put the ribs on the pit and decided to do the chikn in the ECB. Fired it up with some lump n apple wood, filled the water pan and let it heat up. Got the chikn on there and let it all go low n slow. Chikn is done and ribs are foiled.

It could just be the picture, but that looks like some very lean bacon. What is it?

Looking forward to seeing the final product.
 
Well I hope ya'll ain't too disappointed but....... the kids were hungry and I didn't get pics of dinner before it was gone. Y'all know what a loaded baker and corn on the cob looks like anyway right? I do have pics of the ribs and actually have most of the ribs left over. They just LOVED the chicken. Add the taters, corn, apple sauce and biscuits and they were pretty full. I let them have my piece of chicken and sampled the ribs myself. I mopped 3 racks with sauce and left 2 plain. I also mopped the trimmed pieces with sauce. They turned out nicely and were tender with enough firmness to keep em from being mushy. Anyway here's the final Qview of the ribs.

Oh yea the bacon is Emge premium bacon and it was on sale 2 lbs for 4 bucks. It was very lean but had enough fat to keep the chicken moist.

Ok here's the final final and tonights dinner. Rack o ribs, buttered potatoes, green beans (out of pic) and big ol' biscuits w/homemade blackberry jam. Yum .

Man, I thought the chicken looked good, then those pictures of the ribs showed up - very nice!!
