Spare ribs on the mes 30

some spare ribs on my mes 30 yesterday. I followed the 3-2-1 method and they turned out good. I cut the whole racks into 4 peices each so I had 8 total. Used yellow mustard and used a pork rub I bought at the store( it was good not salty and had a sweet taste to it), I used cherry wood with Apple juice in my water pan, for the first three hours, then wrapped them for 2 hrs with Apple juice in the foil, then for the final hour uncovered and mopped bbq sauce in the last 15 mins. I also threw some whole potatoes coated with evoo right on the bottom rack of the smoker and they where tasty:drool

No reason really smoking b, I used to work at the butcher that I bought them from and I always remember people cutting them like that

Foil and finish in the oven or just cook 'em all the way without foil.
 
my new MES 30 came with a rib rack holder.  I am getting ready to but on some spare ribs and was wondering if I should mess with the rib rack or just lay them out on the flat rack.  The rib rack holds them up on their side and would probably do better with BBBs  Any thoughts on the matter  does it change the cooking time?

Never tried one, but I'm sure it wouldn't hurt. Give it a try.
