I'm still new at this, I hear everyone talking about removing the membrane on the back of the ribs, my question is on these spare ribs there is a rather large section of meat attached to the the back side, do I remove this too or just the part of the membrane I can get to, any advice will be greatly appreciated, monty

That flap of meat is called a Skirt. You can leave it on or cut it off and smoke it next to the ribs. The skirt cooks in about 2 hours, then you snack and don't tell nobody! Removing the membrane is your choice. I don't bother. I just score it and it comes off easily after smoking. If you wish to remove it, lift a corner and using a paper towel, pull it off. Sometime it comes in one piece other times it tears and you need to pick at the pieces...JJ

does the membrane not go under the skirt? and if I leave the skirt on do I need to remove it after a the 2 hrs of cooking ?
Membrane is under the skirt. If you remove the skirt, you will be able to remove the membrane. If you choose to leave it on, you don't need to remove it after 2 hours.

I normally leave the skirt meat on there if it' substantial enough

Another way to remove the membrane is to slide a finger or two under the edge, in the middle of the rack, and pull upwards.

The skirt cooks in 2 hours IF removed. If you leave it on cook normally. The membrane is under the skirt with very little on the skirt itself...JJ
