Spare Ribs for a crowd

Hi,

I'm looking for some advice on some smoking i am planning on doing this weekend.  we are having a get together and am expecting around 35 people on Saturday. my plan was to smoke about 5 racks of either baby back or spare ribs.  i was leaning towards spares since i have never done those.  there will also be hamburgers/hot dogs as well.  would like to do all ribs, but not enough room on the smoker.

i was planning on doing the 3-2-1 method, wrapping them for the 2 hours in the middle.  my question is, w/ 5 racks, will i need to adjust the cooking time, or will 6 hours be enough?

i was also thinking about how to server them and was wondering if it would be ok to cut them after the intial 3 hours on the smoker instead of waiting until they are completely done?  my worry is that there will be too much going on trying to grill up the burgers and dogs, and trying to cut up the ribs.  i guess i could just recruit some one else to do the burgers and dogs, but just thought i would ask.

i have a chargiller duo, w/ side box.

I would recommend doing them the day before like 3-2 and wrap in foil and fridge over night then do the sauce step the day of on smoker or grill or even in oven at 275 for 30 minutes. You also could get a rib rack or two if you wanted to do more ribs. Just my $0.02.

Yes....this is exactly how I do mine for the crowd. Smoke them the day before, in the refrig. Next day I slice and sauce them then on the grill to heat up.......perfect every time!!!
