Spare ribs....first go-around....

    Jeff's rub has been mixed up and applied. Bought some Pecan pellets in to warm up....going to nuke them in the morning for a few minutes. Plan is to fire up/turn on the MES40 around 9:45 tomorrow morning. Light the pellets around 10:15 or so and have them in by 10:30 for the 3-2-1 treatment. Of course it is snowing....but the MES is on top of a table with a roof over it so it should not be a problem. If the weather is to bad we will fire up the BGE and hope that the Digi Guru is ion a cooperative mood tomorrow....Got to play with our new tool (toy?) tonight, a Vacuum Sealer from Lisa, a Vacmaster Pro 350. Bought the ribs from Cash & Carry....had 3 good sized racks in the bag...

    Hopefully I won't screw em up to badly.....

    I'm sure you can do it! Doing all three racks? If so try one without foil to see which way you like better!

  8. I doing my first ribs today baby back was wondering if anyone recommends a rib rack or just or right on grill using masterbuilt electric smoker

    I would use a rib rack just to get more in the smoker.

    Temperature troubles with the MES....control panel temp was 25* lower than what my Thermoworks read. Thanks to Bearcarver's advice I clipped the probe onto the grate that is in the middle of the smoker....up against the rear wall....of course this was after we pulled the ribs...Very pleased for a first effort. Thanks to my not so smart smart phone corrupting all of my image files I have no after pictures. But I do have a few questions....but that is for another time/thread as I need to get up off my butt and exercise...

    Same with my MES. Controller read 25 deg lower than real temp. Just need to get used to it. Looks good before pic. Have any after pics.

    sadly no after pictures. My smart phone ain't so smart, for some reason it is corrupting image files.
