I smoked/grilled everything straight through - no foil. The salsa is comprised of onion, cerrano and jalapeno peppers, tomato, beer, and salt. All mashed with a beer bottle - good stuff.





My raw materials:

Nice looking feast! What's up with the mayo on the chicken? Can you tell me more about that? I do leg quarters quite a bit and never have seen that one. I'd like to know more about it. --Thanks
 
Thanks Dude; I got the mayo idea from 2 or 3 posts here on SMF. It seems to be kind of a standard option. At least that was my feeling about it. I tried it one day and liked the result so if I have the time and patience, I do a mayo and rub mix and slather that on the chicken. It really helps quite a bit if you take the time to carefully lift the skin and get a good amount under there too. Try it some time and let me know what you think of it.

Thanks Tom. Just did some tonight. But next time I'll try some that way and let you know how they were. Might not be for a couple of weeks. Tonight my wife said "for Mother's Day I want a meal that's NOT smoked" GASP! Might be time to start looking for a good divorce lawyer. LOL

I think I'll win in court. I'll just slip him some brisket and he'll have to rule in my favor.

Yep, it's time to call the lawyer and serve the Mrs. with an ultimatum - "Let me smoke or let me be free." LOL If my wife ever asked me for a divorce, I'd give her the house and cars as long as I can keep my smoker and my mesquite and oak stock piles.

Don't sweat it too much man, guess what y'all are going to be eating on Father's Day? In my opinion, firing up the smoker and drinking some brews is much better than standing in line then eating assembly line crap with crappy service and ridiculous prices.

Not sure but I can not see the Q-Views.... weird oh well I will check them out when I get home.

That was a ton of grub and I bet it was good. Nice use of a beer bottle!
