South Western YardBird and Waffles

    For this last Throwdown I created an entry based on an old Southern favorite, Chicken-n-Waffles, but with a decidedly delicious SouthWestern twist.

    The Menu
    Boneless Thighs around Cheese Stuffed Pablano Chile, Wrapped in Bacon
    Corn Meal-n-Green Chile, Buttermilk Waffles
    Arroz Mexicana aka Mexican Rice
    Grilled Mango with Honey Cinnamon Glaze
    Sweet-n-Spicy Mango Salsa


    The Yardbird

    Start by marinating the yardbird overnight in Achiote, Cayenne, Cumin, Garlic and Lime juice
    Then fire roast the Pablanos and skin/seed them, then stuff with cheese
    Roll deboned/marinated thigh around chile, and then wrap in bacon
    Toothpicks to hold bacon
    Smoke over a mix of 60:40 Cherry/Hickory, 275° till an IT of 150° in the cheese.




    Corn Meal-n-Green Chile, Buttermilk Waffles

    These waffles are excellent, they come out of the iron with a wonderful outer crust and a moist inside.
    Bits of Green Chiles and Onion in the buttermilk-n-cornmeal batter add bursts of savory flavor.
    I highly recommend them to anyone that enjoys a good cornbread, especially a fried cornbread.

    1C each Yellow Corn Meal, Masa Harina and Flour
    2T Sugar
    1T Baking Powder
    1t Salt
    2C Buttermilk
    1/4C Butter, melted
    2 Eggs, large, beaten
    1/2C Green Chile, diced small
    1/2C Onion, diced small

    Mix dry ingredients in a bowl
    In separate bowl, mix wet ingredients
    Pour wet into dry and stir until just combined
    Fold in chiles and let sit for 10 minutes

    Cook in lightly greased waffle iron till golden brown

    Grilled Mango with Honey Cinnamon Glaze
    Grill Mango slices on BBQ, brush with glaze
    1/4C Honey and 1/2t Cinnamon, mix well

    Sweet-n-Spicy Mango Salsa
    1 can Rotel
    1/2C diced Mango
    1/2C Green Bell Pepper, diced
    1/8C Brown sugar
    1T Cayenne pepper

    Your camera is to good for this forum! Please use a lesser quality camera and send lesser quality pics! Hmm .. no grill marks using my ECB .. sorry peeps.

    Note to self: buy tweezers and insert micro greens into dish like a professional does during cook book shoots..

    Looks real good Chile. Those waffles sound like a real winner to me. Sad to say I haven't owned a eaffle iron in decades. No idea why.
