Thought I had an account on here but apparently I don't. From Texax but in AZ for govt work.

Today: Smoking Brisket and Pork back ribs with apple and pecan wood!

Any AZ folks notice the brisket is smaller here? Maybe its a Texas thing... :)
 
Well you know what they say- "Everything is bigger in Texas"!!! Up here in my neck of the woods, I have seen some Packer Briskets as big as 20 lbs, usually they run 12-14 lbs.

Yeah I'm use to the 18-22+ lbs briskets, but I'll work with what I got. My neighbor said he wants to go in on getting a cow diced up, just need a deep freezer!

First off welcome Lost to SMF. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.

Thanks for all the info folks, been a fan of Jeff's site since I started smoking 3-4 years back. I learned practically everything about smoking from www.smoking-meat.com and expanded from there.

Currently in hour 3 of smoking some ribs and brisket!! Will pop some photos up.
