Source for element, thermostat, etc?

Hey guys,

I am doing a commercial ss fridge conversion and looking for the right element. The inside volume measurements are 41"H x 22"W x 27"D. I calculate this as just over 14 cubic feet. (But I could be wrong.)

Would a Brinkman replacement element work for that? Are they 1250w or 1500w? The actual space for the element is 18-1/2"W x 27"D, so it should be smaller than that, plus have room for the smokebox cover (see below.)

So far, the plan is to use an idiot proof, plug-in, duel-probe Auber PID, and it could even tap off my hot tub power to use 240v, as my hot tub is no longer in use. It will be mainly used for ribs, butts, chickens, and briskets. It is doubtful I'll be doing any cold smoking in the future, but you never know.

For smoke, I plan to fabricate something like the little house-shaped smokebox used by Cookshack and Smokin' Tex, so it would have to have room to fit over the element.

This is my first attempt at anything like this, and I would really appreciate any suggestions. Thanks!
