Considering this entire smoke started from me reading the thread "What do you rub your butt with?" I had to have a humorous title for the results. I rubbed my butt with:
2 tablespoons kosher salt
2 tablespoons freshly ground black pepper
2 tablespoons granulated sugar
4 tablespoons brown sugar
3 tablespoons garlic powder
2 tablespoons onion powder
3 tablespoons paprika
1 tablespoon ground sage
2 teaspoons dried oregano
1 teaspoon dry mustard
1 teaspoon cayenne pepper
Wrapped it up to sit overnight in the fridge...
Then it got 18 hrs of smoking at 225 with Pitmaster's Blend AMNPS to an IT of 205 They lasted almost 12hrs of TBS but I didn't reload.
NO FOIL NO MOP or SPRITZ. I didn't crack that door for any reason. I wanted the bark.
Got a real nice bark in the end...
I let it rest for 3 hrs, no foil, no cooler, no towel. I wanted to see if I kept a crisper bark. (It did!)
First rough shred.. then I couldn't resist nibbling on it.
I won't lie, on first taste, I was not proud of it at all. It didn't have enough kick for me or enough smoke flavor. ( I like it heavy). I consulted the smoking guru's and we decided to put it back in for a 2nd smoke for an hour or so with smoker on low at 100. I splashed on some finishing sauce and put it back in for an hour with hickory AMNPS this time. After that, by my taste, it was perfect and ready for consumption.
Then... my smoking nemesis Mr. Mule came to my mind.. always teasing me with Man-Candy BE's. There is no way a redneck fishing
would ever go down without a
when there is smoking smack talk going on. So I checked the
and there was no mention that Candy was required to be brisket. I took some of the shredded pork, liberally sprinkled on more rub and got the bbq sauce out and tossed it all together. One last dust of rub and back to the
it went. 1 hr of hickory smoke on 275 to really seal in the flavors.
And low and behold... the next flavor of WOMAN CANDY was born...
I will always love BE's but having now tasted a pork variety.. I may be unfaithful to my brisket every now and then. This was sinfully delicious! So Mr. Mule..
like a good mule and admit that Woman Candy rules. I'll have a
while you think of what to do with your butt.. game on! lol
