Hi everyone!

  I will be smoking some bacon that I have been curing. I unfortunately don't own a cold smoker, but can maintain a temp of around 190-200 degrees in my offset smoker. I'll have some room in the smoker for something else (probably around 15 inches or so of surface space) and would hate to just keep it empty. Any suggestions as to what would smoke well at that temp that would be food for dinner as well?

How about a small Double Smoked Ham???

Buy a Cheap Smoked Ham Shank or Butt Portion, and Smoke it again at about 200°.

Be the best tasting Ham you ever had.

Bear beat me to it. The ham is already cooked so you don't have the danger zone being so much of a worry. Smoking at a lower temp like that will really give it the smoke exposure.

The cheaper the ham the better it tastes! I did bacon a couple weeks ago and did a ham and a brisket with it but I have two different chambers in my smoker that are seperated with dampers. I can run one smoke chamber at 250 and the other where the bacon was at about 120. Worked out fantastic!
