Someone asked for a good salsa recipe, and as I was getting one, I lost the thread. I hope they find this. This is probably the number one choice here in our area of Mexico.

Avocado Salsa

This is the “salsa of choice” for a good many restaurants and taco stands throughout Mexico.           

There are also, as many variations of this sassy sauce, as there are seeds in tomatillos.

The full smooth flavor of this gourmet salsa, enhances whatever is being served.

It especially compliments beef and pork well, but I wouldn’t hesitate to serve it with fish or fowl either. It is also great with chips as a dip. Heck! just give me a bowel of the stuff by itself with a spoon and I‘m O.K.!!!

Ingredients:

1 medium avocado, pealed with seed removed

6 or so serrano chilies *

1/2 cup chopped onion

4 cloves garlic pealed

1/2 cup chopped cilantro

8 fresh tomatillos, husk removed and washed

1 teaspoon key lime   juice (or lemon juice)

1 teaspoon salt

1/4 teaspoon cumin

Instructions:

Place peppers, chilies, garlic cloves and onions in a saucepan and boil in a cup or two of water until soft. Spoon vegetables into a blender using some of the liquid.

Blend, adding salt, cumin, cilantro, avocado and lime juice.
