Some random things wrapped in sausage

The other day my Cousin was planning on coming into State to visit.
He was supposed to bring some of his homebrewed raspberry beer (he is supposedly becoming quite the Brew master) and I thought it would be great to smoke up some Q and drink some brew!
Would have like to do some pulled pork, brisket and some burnt ends and ribs but as time allowed I couldn't do the long smokes, then turns out he forgot the beer

Then he wasn't going to be able to make it here until next time anyway SO...
No need to worry about prepping up some Q but now I needed to smoke something, I just had to!
Didn't want to do anything that would take very long and had already planned on some pepper shooters wrapped in sausage so I went from there.

I did a few pepper shooters wrapped in bold JD sausage and the others wrapped in bratwurst meat, tried to find the post from someone who recently did them that way but couldn't find it. For some reason I didn't get any pics of the prepping of the cherry bombs but there will be finished.
For the random things I used the remaining hot JD sausage mixed with a chub of regular.

A Taco Bell soft shell taco





Some onion slices seasoned with crushed red pepper, salt, pepper, garlic and basil.



A few pierogies


Also took some ground turkey and mixed with a bit of plain sausage, feta cheese, fresh spinach, sliced pepperoncinis, oregano and garlic. I would have liked to add a bit of lemon zest but didn't have one.
Shaped the turkey into a log, wrapped and stuck into the freezer to firm just a little then added an additional layer of ground turkey/sausage to the outside so the feta and spinach wouldn't be in direct contact with the smoke.





I also threw in the remaining brats.

Everything went into the smoker at about 250 over some random chunks of wood I had already cut to fit. Oak, cherry and birch were used.
The sausage wrapped items took about 1 1/2 hours to cook, brats I threw in somewhere during the middle of the smoke so I think they took about an hour or just over and the turkey took around 2 1/2 hours to come to 165.

I LOVE the pepper shooters with or without sausage.



Onion was great, if you like onions


Pierogi-good but would have been better pan fried first though have done uncooked wrapped in bacon and they are GREAT!

All-in-all everything was good, things wrapped in sausage and smoked, hard to go wrong there.
The Taco Bell taco was kind of gross but what do you expect...
Everything else was great.
Oh, and I smoked the remaining bit of JD sausages and will be making some biscuits and gravy out of that.

That looks great. Hats off for wrapping the taco...very original. Maybe a little bacon around the sausage wrap may have made the taco a winner.

Now that is something from the under side of a south bound mule for sure there Dave. Sometimes I just think you have far too much time on your hands but you do come up with some combonations from the deep dark depth of somewhere buried deep in the mind of a really good freind of Timothy Oleary. Now they do sound really good this time to. So many thanks to that warped thing of muss you call a brain.

The onion is brilliant! The Taco Bell, not so much. Gonna try the onion idea in some burgers. Hell, might just throws some bacon, pickles and cheese in the center as well.

that looks like some killer stuff, but tell the truth, sausage wasnt the only thing you were smoking was it? Cmon a taco bell soft taco? "I want to party with you cowboy"
 
I am proud to say that yes Rick, you are right. Over 17 years of embibing and as with most things you learn more and become more of an expert with age.
Think fine wine or fine cigars but on another level. Boones Farm wine when young to the #1 best bottle you could crack open currently. Basically what I'm trying to say is I am a connoisseur of fine...things.

I agree, I won't do the Taco Bell again, guess I should have learned after doing a fattie stuffed with a beefy cheese burrito a while back.
The onion I wish I did more of them, it had a nice crunch but was cooked through just enough and the juice from the sausage mixed in with the spices inside during smoking and it was just great.

Jim, you already have a great reputation around this house ever since you posted a smoke using a Taco Bell Burrito. After that one, your reputation was sealed as the greatest inventor!

Today, expanding your envelope yet further.....onion slabs (beautiful!).....piergoies (brilliant and tasty!).....feta cheese and spinach in ground turkey (amazing and worthy of its own thread!)...wow, very impressive to say the least.

Mrs Rivet could only shake her head about the soft taco, and all I could ask was...why?

Thanks John. The turkey was actually really good and it's someting I will make many more times and try different things in it. I was amazed at how moist it remained, even after reheating slices.

Some might consider certain things as genius and others as completely maniacal, I have found a good blend of the two, usually more on the maniac side, is a good mix

No it turned out to be on the gross side, the flour tortilla turned to pretty much mush and the taco itself, well only about as they can make them at Taco Bell, but had it been homemade and maybe even baked or fried first I think it would have been a hit.
 
now that is original! a Taco Bell soft taco...Hmmm I guess you don't know til you try!!! I am wondering whats in my fridge that I can wrap and smoke that hasn't been done before- I know i have some Clausen dills...
 
That's not a bad idea! I mean fried pickles are delicious so why not smoked, and a claussen should hold its texture/crunch a bit better.

I almost-almost! wrapped some pecans in sausage but that would have been such a real pain I decided against it.
 
smoked pecans are excellent...smoked sausage is excellent...I think it might be a good combo. Just while writing this response it occurs to me that bacon wrapped pecans fried would be a tasty thing; the trick would be having the heat right so as to crisp the bacon without burning the pecan.
I salute you for re-sparking my (and I am sure many others) imagination!
