Well as I venture deeper and deeper into this food addiction; I grow bolder with my skills. My first ever whole brisket. I broke down into 3rds. The flat (burnt ends), Middle (sammich sections), and knob (great for chopped). When I tried my first Boston Butt; I went big on it and did 2. I also took a leap and did my first home cured; smoked bacon. Ultra think slices of course! I also love smoking Loin of the Pork! I also fancy great steaks too. Ribeyes being my favorites. I had some 2 1/2" thick cut ones for my moms birthday.
