I was trying to find info on smokers,when thankfully, i stumbled onto this website. Thank you! Im smoking a beer butt chicken right now in a char-broil, for about 4.5 hours at 225-250. Using applewood and lump charcoal. I brined it for 24 hrs., injected it with homemade creole butter mixed with some smoked chicken broth, probably over-stuffed it with lemon/apple/garlic/onion, and hoping it turns out well.
