My name is Kevin Lombard I have been a professional cook for over 20 years I really like BBQ and am still learning this fine art I look forward to reading this forum

I have an offset smoker but what I want is an UDS been hearing good things about them. I am really new to this style of cooking

What type of offset smoker?  Brand name?  Is it a reverse flow or does the firebox dump right into the smoke chamber?

I also have an offset smoker...a CharGriller Pro that needed a lot of modifications to make it work well.  Since then I have acquired a WSM (Weber Smoky Mountain cooker) and a Masterbuilt Electric Smokehouse (MES).  My favorite is the WSM.

Unless you own a really high-end offset, you will need to make some mods, but the good news is that the good people on this forum will be glad to help!

UDS smokers are awesome, but are typically built by the users, though I suppose you could probably find one on Craig's List.
