The heart of the storm just missed us, thank god. Still got 6+ so far and smoke is rolling. The bottom round, corned beef and baby backs were all sous vide for about 60 hours at 129, then chilled prior to today.
First off smoker, bottom round rubbed with Mad Hunky Just Add Beef, great flavor and fork tender. This will be chilled and sliced paper thin on meat slicer
