Snow day fun

    The heart of the storm just missed us, thank god. Still got 6+ so far and smoke is rolling. The bottom round, corned beef and baby backs were all sous vide for about 60 hours at 129, then chilled prior to today.

    First off smoker, bottom round rubbed with Mad Hunky Just Add Beef, great flavor and fork tender. This will be chilled and sliced paper thin on meat slicer

    Next of the smoker is corned beef. Rubbed with tatonka dust and smoked til an IT of 145. OMG it's incredible. So tender and juicy.

    Baby backs are done, rubbed with Sweet Rub O mine, sauced with Sweet Sauce O mine.

    Well I am waiting for the kitchen sink. Its the only thing ya didn't smoke so far.....LOL

    Sure looks good, and you poached it with Sous Vide then got some smoke on it, Sure makes that meat a pretty color and I am told tender and juicy.

    I assume you have plenty of adult beverages stocked up and are not yet even looking forward to the spring thaw. I love it!

    Nothing in your profile yet....... where'd ya get all that pristine white snow?

    All this snow in Nebraska today, we got lucky compared to some places not to far away

    Butt is done, 9 hours on smoker and a 2 hour rest. Rubbed with a local rub called Fat Fergs. Great flavor
