This one was a rough weekend a couple weeks ago. We did 33lbs of cheese, 40lbs of snack stix, two butts and a roast beef. John and Dennis cutting down the 2nd chuck roll and grinding it up. 6 different kinds of cheese. The Busch Light twins. Two 10lbs butts and a 16lbs sirloin tip roast in the UDS. I do believe I have figured out what the maximum capacity is in the plywood smoker. There were three different kinds. Beef, jalapeno and beef, and cheddar and beef.
