Snack Sticks

Did anyone ever try making snack sticks with Cabelas #8 grinder along with the long tube that came with it for making sticks, well I tell you it does not work I have tried and tried but the meat will not go through it will build up and get mushy am I doing something wrong. I called cabelas but who ever you get they don't seem to know any suggestions would be help full. I am thinking going to a stuffer.

Grinder/stuffers are crap in my opinion. The meat gets plain old masticated going thru the screw feed again. And the more back pressure <read small casings> you have only exaberates the issue.

Get the stuffer.

Hey Dave, I am not familer with your grinder, however, with my two electric grinder-stuffers, I grind the meat, then take out the grinding plate and cutter blade, put the stuffing tube on and go for it. The meat keeps the auger seated just fine. Hope this helps.

I tried the grinder/stuffer thing and it didn't work god for me either unles it was a 30mm or larger casings and a large chunky sausage like Italian. I went out the next day and ordered my 5# vertical from Grizzly and I LOVE it!

The only grinder stuffer I ever like ws my old hand crank clamp to the counter edge model that was mu grandmothers and my Mamas before mine. It died last year.

it's the slow feed rate, Debi...the meat just gets beat to 'ell and back.

That is what I do , but when I do the long thin tube for snack sticks it will build up and turn to mush it simply will not go. When I grind meat it works great but for sticks no way. I think it will work in a stuffer tube is to small for grinder/stffer for bigger sausages works ok.

Mine will run it just takes to long thats why I went to ring bologna. It will still mush it a little but thats okay in ring bologna. on a side note I started using a premade seasoning from suttons bay trading company called venison ring bologna mix it is the best deer bologna ive ever had. I use a 35-38mm casing and it goes pretty fast.

Thanks for the help I will try. It just gets so disgusting when they sell stuff and it does'nt work.

dont get discureged you need to get a regular sausage stuffer for snack stix and do not buy the horn type it will not do the snack stix either you will need a hand crank stuffer northern tool has a five pound hand crank stuffer for around $80.00 you will have to make your own nozzle for doing snack stix they can be made from pvc or copper tube you are not the first one to learn things the hard way but it will pay off big in the end
