Nicely done Dave. I just got back from being on the road, so hopefully after the honey do list I can get started on mine. Now I'm second guessing the propane. Looks like the PID was awesome. Bad thing is where I want to put the smoke house at my buddies house where we hunt is power is a long way off with out added some new circuits and a 250 foot conduit run.

I went electric because I started thinking the safety issue being so close to my house, if I could have put it way out away from everything I would probably stuck with propane. I am happy I went electric though, there is so much other work involved making sausage and stuff that it's nice to be able to set the PID and just let it run without having to tend to it.
Can't wait to start seeing yours come together!

Outstanding sticks! It was cool watching you make this smokehouse.  But man... if thee sticks are indicative of what going to come out of it then I can't wait to see more. Bear is correct. Perfect!  Thats real professional cooking my friend.

Dave i'm going to venture into the snack stick arena soon...when i do i might need some advice from the "Sausage King"

Keith, I am not the Sausage King!!!! I have a long way to go!!! Sticks are real easy, I've been using premixed seasoning mixes and I think they are real good. I started with a jerky gun and then decided to expand to a stuffer and it went on and on.

Dave you reminded me of something, years and years ago i started doing jerky with a jerky gun and remember thinking it was "fake"  jerkey  LOL, now looking back on it i should have embraced it because that's the concept  to make non casing sticks... little did i know then!

Casingless sticks are Great and so is ground meat jerky! A friend of mine has the ground jerky down pat, he made some last week and I truly thought it was regular jerky!
 
Those are casingless?  hmmm  I missed that part.  Now I am really impressed Dave!
