Snack stick question

Hi, guys. First thread here for me.

I just got my MES 30 and AMNPS so I'm a newb at this sausage smoking deal. I've cooked a lot of other things on my BGE but this is my first attempt doing anything in the MES. Besides a couple batches of fresh sausages, it's my first foray at smoking sausages.

So, I stuffed some venison snack sticks today and I have them in various lengths. Some pretty long some short. as I said, I'm learning soooo, I had a few ooops with the casings. What I really need to know is how should I put them on my racks in the MES when I go to smoke them tomorrow? Coiled? Cut to lengths? Also, what do you do with the ends? Tie em? Leave em open? I have about 12 lbs. so it's a decent batch. I just wasn't sure as to where to go from here.

Thanks, David. I already figured that out the hard way. Lol! I did my batch and just cut the sticks and found the ends had hardened. I had to trim all of them off. Now I know. :)
