Hi All,

So I’ve got a MES that’s been converted to gas and run an AMNPS with a letterbox mod... After many initial issues getting the thing to stay lit I can happily say these past few months have been great and I have no problems whatsoever with it.

My one concern though Is the subtle smoke flavour I’m getting. I’m always getting a great smoke ring (here you can see my last pulled pork) but for whatever the reason the smoke flavour really is really quite subtle and I’m struggling to get it much stronger. The vent is usually half opened and I run a 50/50 mix of hickory & mesquite pellets...

The flavour is nice and I really can’t complain too much but would like to get a slightly smokier flavour coming through. Any thoughts or hints would be appreciated.

You can cut the Exhaust down to hold more smoke in longer or light both ends of the AMNPS...JJ
 
Mesquite is a little stronger than hickory so you could try just mesquite. 

Do other people think it needs more smoke or just you? And is it better the next day? After a day of inhaling the smoke and having your clothes smell like smoke your sense of smoke taste will be a lessened a bit. I smoked all day saturday and sunday this weekend and by sunday night all I could smell was smoke yet the smoked turkey I had for dinner last night didn't have a pronounced smoke flavor (my wife thought it was perfectly smoked).

Hi All,

So I’ve got a MES that’s been converted to gas and run an AMNPS with a letterbox mod... After many initial issues getting the thing to stay lit I can happily say these past few months have been great and I have no problems whatsoever with it.

My one concern though Is the subtle smoke flavour I’m getting. I’m always getting a great smoke ring (here you can see my last pulled pork) but for whatever the reason the smoke flavour really is really quite subtle and I’m struggling to get it much stronger. The vent is usually half opened and I run a 50/50 mix of hickory & mesquite pellets...

The flavour is nice and I really can’t complain too much but would like to get a slightly smokier flavour coming through. Any thoughts or hints would be appreciated.

Gas, whether natural or propane needs lots of air to burn and produces a lot of moisture when it burns.  That's why gas grills, stoves and commercial kitchen appliances have open vents for ventilation that lets out of heat/humidity, rendering them less efficient.  Vigorous burning of cooking fossil fuels like coal/charcoal, propane, natural gas and then wood and grasses produce Co and No gases to form the smoke ring.  You get the smoke ring without smoke (try it, you'll be surprised).  The convection needed to burn gas may be the problem (not enough time so for smoke to get around before it's out the vent.)  Burning both ends of the AMNPS maybe a solution.  Since the MES is insulated, make that work for you.  Someone mentioned a bun son burner (very low and maybe too slow!)

So firstly thanks very much for all the feedback...

I don’t think it’s just me in regards to the smoke flavour - my wife also seems to think it could have a touch more. Based on what I’ve read though there were some great pointers, sounds like in all likelihood could be the gas.... Next time round I think I’ll just try all of the following at once:
  • Closed vent
  • 100% mesquite
  • Light both ends of the AMNPS
I’ll see how that goes, and can always wind down a little if it’s too smoky - in all honesty though I don’t think I’ll have this problem.

I’ll give some feedback when I get my next chance.

I don't have a MES, but I do have a gas fired GOSM with a AMNPS/Mailbox mod, and I get plenty of smoke flavor. I use Bear Mtn pellets which are 70 alder, which is a light flavor wood too. The vent for the mailbox comes in around 6-8 inches above the flame.
