Well Andrew's deer did not go to waste! I have made 12 lbs of deer jerky and 60 lbs of venison sausage. I'm smoking 40 lbs of sausage today in the UDS. Vents are opened up wide to let the moisure out and it's still going to be moist! Gotta love the UDS! I'll post a few photos later.
