Smoking Venison Loins

    I have some venison loins I would like to smoke. I saw some ideas on this forum but most seemed to be on the exotic side. I looking for some ideas to just have a good smoke flavor leaving me with a finished product. I would like the smoked loins to be a snack item and not a dinner item. So if anyone would like to share please give your ideas with a finish temp and wood you would use.

    I keep my V loin smokes simple. Shake some SPOG on and smoke at 225 until IT of 130*, nice med rare. I like apple, but have used Hickory many times also.

  5. I once had some at one of the sportshows either Raritan or Gardenstate.  The loins tasted as if they were brined in a trout brine then smoked. Nice and rare on the inside. Been meaning to try it myself.
